Recipe || Banana Chocolate Chip Pancakes

I’ve had this recipe queued up for ages now.  You can tell by the snow in the background. Ahh!!! Our apartment in Stratford. I miss being there SO MUCH. But let’s talk about pancakes. Delicious, delicious pancakes. The amazing thing about this recipe is that there is no sugar at all in your batter!

Banana Chocolate Chip Pancakes:
Adapted from Skinny Taste
 
Ingredients:

1 cup of flour
2 teaspoons baking powder
1/4 teaspoon of salt
1 large banana, ripe, mashed
1 cup of milk (I used 2%)
3 egg whites
2 teaspoons of vegetable oil
1 teaspoon of vanilla
1/4 cup of chocolate chips

Instructions:

Mix all the dry ingredients in one bowl. Mix the wet ingredients (including the banana) in another until smooth. Combine the wet ingredients into the dry ones and mix thoroughly. Lastly, mix in the chocolate chips.  Heat a large skillet over medium heat. When warmed spray slightly with cooking spray.  Ladle onto the skillet, flip over once the pancakes starts to bubble and the edges set.

(They probably weren’t so healthy after I covered them in Aunt Jemima.)
