Recipe || Strawberry Coffee Cake

There’s no coffee in this cake… contrary to what Sam believes. It relies heavily on the deliciousness that is the strawberry. I bought the last of the nice looking strawberries at the store. I love coffee cakes, because I love any excuse to eat pastries and desserts for breakfast.

It takes loads of strawberries to get 3 cups diced. Or maybe I’m just doing it wrong.

Ingredients:

For cake:
4 cups of flour
1 1/4 cups sugar
1 teaspoon salt
1 teaspoon baking powder
1 1/2 cups milk
6 oz greek yogurt
2 eggs
2 teaspoons of vanilla
1/2 cup vegetable oil
3 cups of strawberries, diced

For the crumble topping:
6 tablespoons of butter, softened
3/4 cup sugar
2/3 cup flour

Instructions:

Preheat the oven to 350 F.

Grease two loaf tins. Combine all of the dry ingredients for the cake. Mix them until they are thoroughly combined. Add in all the wet ingredients and stir until it just comes together but isn’t entirely smooth.  Gently fold in the strawberries.

Split the batter between two loaf tins,

In a second bowl, mix the topping ingredients together, then crumble over the top of your cake.

Bake for 45-55 minutes.

Then enjoy for breakfast or a snack with your beverage of choice! (Diet coke for me, coffee for Sam.)
