Recipe || Gingerbread Cake

As I am still obsessed with my fall flavours, up until this weekend I hadn’t really ventured into any classic Christmas recipes. But never you fear! There’s some Holiday baking in store for you all starting today!
Gingerbread Cake

I feel like you can almost smell the warm spicy goodness through your computer screens.

Ingredients:

2 1/2 cups of flour
1 1/2 teaspoons of baking soda
2 teaspoons of ground cinnamon
2 teaspoons of ground ginger
1/2 teaspoon of nutmeg
1/4 teaspoon of salt
1/2 cup of butter, softened
1/2 cup of granulated sugar
1 large egg
1 cup of molasses (treacle in England) mixed with 1 cup hot water.

I love the colour of molasses.

Instructions:

Preheat oven to 350 F.

Try to restrain from licking the spoon.

Sift together flour, baking soda, cinnamon, nutmeg and ginger.  In another bowl, cream together the butter, sugar and egg for about 2-3 minutes. Mix 1/3 of the flour mixture into the butter-sugar mixture. Then add 1/2 of the molasses mixture. Stir well. Repeat until all of the mixtures have been mixed in.

Letting baked goods cool is always the hardest part of baking.

Bake for 30-35 minutes. Top with powdered sugar or whip cream! Before I topped mine with powdered sugar, I laid down construction paper that I had cut into the shape of Christmas trees to leave a patten in the sugar.

 So they aren’t perfect trees. But I like them.
