Recipe || Chocolate Cookies filled with Cookie Dough

This recipe has been on my mind for awhile now, because what could be better than a big soft cookie and cookie dough smooshed into a delicious sweet sandwich? I think not many things.

Cookie dough and a cookie? I’m a lucky girls.

Ingredients:

(For chocolate cookies)
1 cup of unsalted butter
1 cup of light brown sugar
2 eggs
1 teaspoon of vanilla
3/4 cup of cocoa powder
2 cups of flour
1/2 teaspoon of cinnamon
1 teaspoon of baking soda
a dash of salt

(For cookie dough filling)
1/2 cup of unsalted butter
2/3 cup of light brown sugar
1 teaspoon of vanilla
1 1/2 tablespoons of milk
1 cup of flour
1/2 cup of chocolate chips

Instructions:

Preheat oven to 350 F.

In a large bowl, cream together your sugar and butter until light and fluffy. Then beat in eggs one at a time. Add the vanilla and mix well. In a seperate bowl, shift together the cocoa powder, flour, cinnamon, baking soda and salt. Slowly add that into the butter mixture.

Roll the dough into balls and place them on a lined cookie sheet. Press each one down gently. Bake for 9-10 minutes, then remove to let cool.

There are few things that bring more joy than chocolate chip cookie dough.

Whilst your cookies are cooling make your filling. Cream the butter and sugar together. Then add in the milk and vanilla. Lastly, fold in the chocolate chips.

When the cookies are cooled, spoon in the filling and then press another cookie on top, gently, to form a sandwich.
