Pumpkin Spice Cupcakes with Maple Frosting

I promise there won’t by any more pumpkin recipes until next fall. I just had to get one last one out of my system. And trust me- it’s a goodie! The maple frosting is the star of the show. I just wanted to slather it on EVERYTHING in the house.
 

Pumpkin Spice Cupcakes with Maple Frosting

Ingredients:

(For cupcakes)
1/2 cup vegetable oil
1 cup of flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of ginger
1/2 teaspoon of nutmeg
1/2 teaspoon of salt
2 eggs
1/2 teaspoon of vanilla
1/2 cup of granulated sugar
1/2 cup of brown sugar
1 cup of pumpkin puree

(For frosting)
6 oz of cream cheese
3 tablespoons of unsalted butter
2 tablespoons of maple syrup
1/2 teaspoon of vanilla
2 cups of confectioners sugar

 

Instructions: 

Preheat oven to 350 F. Line cupcake tin.

In a medium bowl mix flour, baking powder, salt, spices and baking soda together.

Orange batter is slightly terrifying though I still always want to lick the spoon. (But refrain.)

In a large bowl mix eggs, pumpkin, sugars, oil and vanilla together.  Slowly whisk the flour mixture into your pumpkin mixture.

Fill the cupcakes 3/4 of the way full. Bake for 20-25 minutes.

I love seeing the products of my gluttony all spread out in front of me.

Whilst the cupcakes are cooling, make your frosting. Cream together the cream cheese, butter, maple syrup and vanilla. Frost your cupcakes once they are cool and enjoy!
