When it comes to chocolate and peanut butter, Sam is a man crazed. It’s easily his favourite dessert combination and he would happily have me only bake things in that flavour family. It makes sense that his favourite candy is Snickers.
We had people round for a small anniversary dinner a few weeks ago and it was hard to keep Sam away from the cupcakes until our guests arrived. Sam is quoted as saying they were “Gorgeous. The best thing I’ve ever eaten.”
Peanut Butter Stuffed Chocolate Cupcakes
Ingredients:(For chocolate cupcakes)3/4 cup flour3/4 cup sugar1/4 cup cocoa powder3/4 teaspoon baking soda3/4 teaspoon baking powder3/4 teaspoon cornstarch1/2 teaspoon salt1/3 cup milk1/4 cup of strongly brewed coffee3 tablespoons of vegetable oil1 egg1 1/2 teaspoons vanilla1/2 cup dark chocolate chunks(For peanut butter filling)1/2 cup peanut butter (smooth)1 tablespoon of unsalted butter2 tablespoons icing sugar(For peanut butter frosting)200 g of cream cheese2 1/2 cups of icing sugar1/3 cup of peanut butter1 teaspoon of vanilla50 g unsalted butter
Instructions:Preheat your oven to 350 F. Line your cupcake tins. In one bowl shift all the dry ingredients together (except the chocolate chunks). In another bowl, throughly mix together all of your wet ingredients. Then fold your wet ingredients into the dry ones. Stir until well combined and then fold in your chocolate chips. Spoon into your cupcake tin and bake for 15-17 minutes. Then set aside to cool.
Whilst the cupcakes are cooling make your peanut butter filling. Cream together the butter, sugar and peanut butter. Put it into a pipping bag and pipe about a teaspoon of the mixture into the center of each cupcake.
Then prepare your frosting. Cream together your butter and sugar. Then mix in the cream cheese, vanilla and peanut butter. Frost your cupcakes and then enjoy!
