We are now entering what I like to call “Birthday Week” where I celebrate my birthday being on Thursday is small ways every day. Like by eating something awful for me. Something like this:
Chocolate Chip Cheesecake Cookie Sandwiches
(Adapted from Back for Seconds)Ingredients: (For Cookies)1 cup of butter1 cup of brown sugar1/2 cup sugar2 eggs1 teaspoon salt1 teaspoon vanilla1 teaspoon baking soda2 1/1 cups of flour2 cups of chocolate chips(For the filling)4 oz of softened cream cheese2 tablespoons of butter1 teaspoon of vanilla 1 1/2 cups of powdered sugar
Instructions:
Preheat oven to 350 F. Cream the butter and sugars together until they are light and fluffy. Then add in the eggs one at a time, followed by vanilla. Mix in the salt, baking soda and flour until thoroughly combined. Lastly, fold in the chocolate chips.
Spoon tablespoon sized amounts of dough onto an ungreased cookie sheet and bake for 6-8 minutes. Then remove the cookies to a wire rack to cool.
Whilst the cookies are cooling make your filling. Beat together all the ingredients for the filling until they are well combined. My filling was a bit thick so I added about a tablespoon of milk to thin it out.
When the cookies are cool spoon a bit of the filling on to the bottom of one cookie and sandwich with another. The repeat!
