One name is truly synonumous with cupcakes in London: Hummingbird Bakery. Their legendary cookbook is almost as popular and today I am bringing you my adaptation of their nutella cupcakes.
Hummingbird Nutella Cupcakes
(Adapted from the Hummingbird Bakery Cookbook)Ingredients: (For the cupcakes)1 cup of flour3/4 cup of sugar1/4 cup of cocoa1 1/2 teaspoons of baking powder40 g of butterpinch of salt1/2 teaspoon of vanilla1/2 cup of milk1 egg120 g of Nutella(For the frosting)2 cups of icing sugar80 g of butter80 g of Nutella2 tablespoons of milk
Instructions:
Preheat the oven to 350 F. Prepare your cupcake tray.
Mix together the flour, sugar, cocoa, baking powder, salt, butter. Stir until everything is thoroughly combined. Slowly beat in the milk. Lastly add in the egg and vanilla. Beat very well.
Fill cupcake liners 2/3 full. Bake for about 20 minutes, then set aside to cool. When the cakes are cooled hollow out small centres in each cake and fill with a dollop of Nutella.
Then make your frosting. Beat together the butter and sugar until it’s come together. Then add in the milk and continue until the mixture is light and fluffy. Lastly, fold in the Nutella by hand. Frost your cupcakes and enjoy!
